Naturally fermented and twice distilled using a steel pot with clay condensor & bamboo tubing. A palate of leather, slate & black olive finishing with sweet notes of dark dried black cherries. Our only expression from Puebla, MX. Hand crafted in the temperate hills of the village of San Pablo Ameyaltepec with a vista of the two ancient volcanos. Agave: Wild Papalote. Naturally fermented and distilled using a continuous reflux still. Nose of spice and lilacs, palate of sweet tropical fruit, crisp citrus and pear skin, with a creamy, complex mineral finish. ABV 47.

San Jose Rio Minas

Hand crafted amidst a giant mango grove next to the river in the mountainous forests of the village of San Jose Rio Minas. Agave: Espadin & Arroqueno. Naturally fermented and twice distilled using a steel pot with clay condensor & bamboo tubing. Nose of sweet papaya and ripe peaches. Palate of roses and violets. Finishes with notes of pepper, herbs and eucalyptus. ABV 50.

A celebratory mezcal in which wild mountain apples, plums, red plantains, pineapples, almonds and a Chicken Breast are used in the third distillation. ABV 49.
