What Is the Pink Ghost?

The Pink Ghost is a lush, tropical-style mezcal cocktail by Carlos Yturria of San Francisco. It blends Del Maguey Vida Single Village Mezcal with fresh strawberries, coconut milk, lemon juice and honey syrup, served tall over crushed ice.

Creamy coconut and ripe strawberry give the drink its ghostly pink swirl, while Vida’s smoke keeps it grounded and grown-up. A spray of hemp oil adds an unexpected herbal aroma, and a mint sprig finishes the serve.

Think of it as mezcal’s answer to a strawberry colada — indulgent and summery, yet layered enough to keep a mezcal lover interested to the last sip.

BY CARLOS YTURRIA — SAN FRANCISCO, CALIFORNIA

  • 1-1⁄2 ounces Del Maguey Vida SingleVillage Mezcal
  • 2 ounces strawberry puree or muddled fresh strawberries
  • 1 ounce coconut milk
  • 1⁄2 ounce freshly squeezed lemon juice
  • 1⁄2 ounce honey syrup (recipe below)
  • 1 spritz hemp oil
  • 1 mint sprig, for garnish

Combine all the ingredients, except the oil and garnish, in a cocktail shaker filled with ice and shake until well chilled. Strain into a tall glass over crushed ice. Spray with hemp oil and garnish with the mint sprig.

NOTE: If making the recipe in a Slushie machine, add 1-1⁄2 ounces water per serving.

HONEY SYRUP

Bring 3 parts honey and 1 part water to a boil in a pan, and then simmer until all the honey is dissolved. Let cool and store in the refrigerator for up to 1 month.

Pink Ghost FAQ

Any expression works — the recipe lists our recommendation. Vida Clásico and Vida Puebla are approachable, versatile choices for most cocktails, while single village expressions like Chichicapa or Tobalá add more distinctive character.
Del Maguey mezcales are balanced rather than aggressively smoky. In a cocktail, the smoke softens into a warm, roasted-agave depth — citrus, sweetness, and dilution round it out, so the drink stays bright and easy to enjoy.
We recommend freshly squeezed every time. Bottled juice loses the aromatic oils and bright acidity that balance the mezcal, and the difference is easy to taste in a three- or four-ingredient recipe.
Yes. Agave syrup and simple syrup are usually interchangeable, most orange liqueurs can stand in for each other, and garnishes are flexible. Keep the mezcal, the citrus, and the proportions, and the drink will hold together.
